Sunflower honey is produced in central areas of the Peninsula, Castilla la Mancha and Andalusia. Very light amber to amber colour, with very characteristic yellow orange tones. Floral aroma with oily undertones. It has a sweet, distinctive taste, leaving an irritating sensation of clearing the throat. It stands out for its quick crystallization, in large, compact crystals. It is the sweet honey, par excellence.

It is used as a substitute to sugar in confectionary and baking due to its sweetness and texture as its sweetening power is far greater than sugar.
