Lemon honey mainly comes from the Valencian Community and Murcia.
It has a tendency to crystallize slowly, very light yellow colour, white and a faint aroma, floral with methyl antranilate undertones.
It has a dominant sweet taste but with a clear acidic component, not as intense as in the mandarin or orange honey, which makes it very pleasant.
Moderate to slow crystallization.
