Rosemary honey is produced in Central Spain, Central Eastern parts of the Peninsula, mainly in the Valencian Community, Catalonia, Andalusia, Extremadura, Aragón, Murcia and Castilla la Mancha.

It has a sweet aroma of aromatic plants, slightly balsamic. Its taste is generally sweet.

The colour of rosemary honey is very light amber and has quite a thick consistency that turns white when crystallizing.

Quickly crystallizes in fine or thick crystals depending on accompanying pollen.
