Honey is considered to be mountain honey when it is collected at a minimum altitude of 800m. In Spain, the most common mountain honey comes from honeydew typically from forest honey (holm oak, oak and chestnut, etc.) and other multifloral varieties.
It is a dark colour, a dominant floral aroma with some fruity, malted or earthy undertones, according to the blossoms present in the honey.
Sweet taste but with some saltiness. Crystallization is variable.
It has different characteristics depending on the harvested area, due to the incredible diversity of pollen.
