In Spain, forest honey comes from the holm oak, cork oak and oak trees that produce honeydew from August to September. The honey can be harvested throughout the Peninsula except on the coastal areas.
It has a dark colour with a floral aroma with a typically malty, intense and rather persistent component.
It has a sweet taste with a hint of sourness when chestnut flowers are present.
It crystallizes very slowly.
