Spanish lavender is produced in Aragón, Castilla la Mancha, Castilla y León, Catalonia and the Valencian Community.

Variable colour between light, whitish amber to amber sometimes quite dark (when some holm oak honeydew is present).

Floral aroma with a clear lavender component, extraordinarily intense and very persistent, intensifying more at the back of the throat.

Sweet taste with clear acidic undertones. When the honey is a darker colour, it has salty undertones.

It has a moderate tendency to crystallize as far as the speed and the size of the crystals are concerned.
