Calluna honey or “Biércol” honey is produced in the mountainous bushy areas in the central and northern Peninsula, particularly in Soria.
Its aroma reminds us of heather honey, intense and persistent. It has a sweet taste with clear sour and salty tones.
It is a tixothropic honey. This means that the honey contains some gel-like properties that go from a gellified state to liquid simply by shaking the gel.
It is a greatly valued and appreciated type of honey in international markets with variable availability.
