Eucalyptus honey is an amber coloured honey generally dark with some characteristic greenish tones.

An unusual, unmistakeable damp wood aroma, very intense and very persistent, probably the most persistent of all the honeys.

Sweet taste with slightly acidic undertones and quite often, salty undertones.

It has a moderate tendency to crystallize and when it does, it forms fine crystals.
